I see no British festivals make it - what about Bog Snorkling, or Cheese Rolling, Doyle Flunking in Norfolk, the Bacup Nutters, or the Birdman Festivals.
Went to La Tomatina festival 2 years ago.It is an absolutely mad event, with 10's of thousands of people squashed into a very small street.It completly goes mental when the tomato trucks start to drive through and you start getting pelted with tomatoes.As the time goes on it gets quite hairy with it being very slippery under foot , people pushing and being ankle deep in tomato juice.It is amazing fun but at the end you are glad it only lasts for one hour and there is to be no more tomato throwing after that.Then everybody seems to disappear as they start to clean up the street.Be aware there are no taxis to get you out of Bunol, you have to catch the train and you have to have changed your clothes and be reasonably free from tomato crud.Also if going back to Valencia the taxis there will not take you from the train station unless you are really clean so be prepared.
Have a great time there, buy some goggles to wear(you'll need them) and be prepared to find tomato pips in places you be amazed at for the next week!
