The entire Tenchu series of games are what stealth games are all about. the best has to be Tenchu:Wrath of heaven on ps2 (Tenchu:Return from darkness on the xbox)

Metal Gear Solid, there is no match for it.
And I'm sorry to disappoint you but Assasins' Creed is not a stealth game. No, I'm not saying that because I don't like it, I play Assasins' Creed often and its one of my favourite games.
